Thankful for Bacon

I’m in pretty good spirits as I write this. I have a lot to be thankful for and lately, I find it hard not to smile as I am constantly reminded of how much I’m blessed. I feel super loved and supported, I’m warm and cozy, and have a full belly. Life is good. So, please don’t mistake me for ungrateful when I say I’m thankful for bacon.

Yes, that’s right. Homemade bacon happened. And just in time to make the Thanksgiving dish I decided to bring to our family’s feast – Fingerling potatoes with Bacon Cream.

All the ingredients that went into my dish were local and in season. Having homemade bacon to make it a reality was just the icing on the cake.

Like most things, learning about the time consuming process which results in this tasty treat made me appreciate it even more.

There was talk of trading some bacon for some freshly caught salmon. So, I’m thinking that between Jeremy’s homemade bacon and my canned goods and “farm” fresh eggs, we’re going to be in a pretty good spot for bartering. We might be the most popular kids in the neighborhood right now. So yeah, this year, I’m pretty thankful for bacon too.

P.S. Clearly, as evident in this post, I’m thankful for this super fun editing site I found for my photos (thanks, Joy!). I promise I won’t go overboard with the editing on every post. Just bear with me while I play a little.

    Awesome. Ok, so now I expect a lengthly post on how to make bacon:)

    As you can tell, I am getting caught up on your posts and working backward…I will need to check out the new photo tool. I don’t mind your new photo style a bit, super cute and fun.
